The Kir was created by the mayor of Dijon, France, to highlight the province’s two main cash crops-Burgundy wine and crème de cassis. We’ll keep the cassis, thank you, but raise your wine some bubbles.

This peach of a cocktail was created in the early 1940s at Harry’s Bar in Venice, Italy-reportedly a favorite hangout of Ernest Hemingway and Orson Welles.
